Rule number one: always use  quality ingredients. “All my sweet recipes are made from Philadelphia cheese,” Saada says. “For decoration I use a flavoured 30% fat cream to give the cake a lighter side. I also recommend working with seasonal products. It is essential that the biscuit crumbs fits in [so you need to] mix it until [you get a] sandy flour.”
